Traditional Wasabi Cultivation in Shizuoka

Wasabi is an endemic species of the Japanese islands that evolved uniquely. Worldwide wasabi cultivation began in Shizuoka prefecture approximately 400 years ago. The ridges along the slope of the mountain were cleared to make terraces for wasabi fields and fertilizers were used as little as possible, using nutrients contained in abundance in the spring water instead. These efforts led to the development of techniques for high-quality wasabi production. The wasabi fields provide a unique landscape to the region and a habitat for endangered species.

静岡水わさび伝統栽培

静岡県はわさび栽培発祥の地であり、約400年前に栽培が始まりま した。県内では沢を開墾して階段状に作ったわさび田で、肥料を極 力使わず、湧水に含まれる養分で高品質なわさびを栽培する伝統 的な農業を継承しています。また、わさび田は独特な景観を織り成 し、希少生物に生息環境を提供しています。これらが評価され、静岡 県のわさび栽培は「静岡水わさびの伝統栽培」として世界農業遺産に認定されています。
