Mr. Okabe has been recognized as a luxurious nutritional and medicinal cooking expert by China, and he is a master of nutrition. He created the menu with the idea of offering “deli- cious food which makes one beautiful and healthy from the inside” . For this reason, the restaurant has an overwhelming number of female customers, and a large number of mid- dle-aged guests who are interested in healthy lifestyles. The stir-fried vegetables are made based on the idea of a “fried salad” . Mr. Okabe says, “Even if you eat until you are full, your stomach won’ t feel heavy.” The ingredients are heated to an exquisite finish while still retain- ing their freshness. When buying vegetables, the cooperation of the local agricultural cooper- ative JA Enshu Chuo (main office in Iwata City), is essential. The organization has a Chinese vegetable research room, and local vegetables can be bought from it directly. This makes it possible to get vegetables which retain their freshness and flavor, and Chinese vegetables which are unusual elsewhere.
